Share your favorite restaurant recipes, tips and tricks!


This is one of my favorites and it's pretty simple to make -

Chicken Bryan (Carrabba's)

1 TBS Garlic, minced

1 TBS Onion, finely chopped

2 TBS Butter

½ Cup Dry White Wine

¼ Cup Lemon Juice

2/3 Cup Cold Butter, sliced

1 ½ Cups Sun Dried Tomatoes

¼ Cup Fresh Basil, chopped

½ tsp Kosher Salt

½ tsp White Pepper

8 oz Carpino (or other goat cheese, room temperature)

1 lb Boneless, Skinless Chicken Breasts

 

Soak the sun dried tomatoes in warm water for 30 minutes; drain.

In a large skillet, sauté the garlic and onion in 2 TBS butter over medium heat until tender; stir in the wine and lemon juice.  Increase the heat to medium-high and cook to reduce by half.  Reduce the heat to low and stir in the cold butter, one slice at a time.  Stir in the tomatoes, basil, salt and pepper.  Remove from heat and set aside. 

Pound the chicken breasts to 1" thickness.  Brush them with olive oil and sprinkle with salt and pepper; grill for about 10-15 minutes or until cooked through.  A few minutes before the chicken is done, place equal amounts of cheese on each breast.  Spoon the prepared tomato mixture over the chicken.  Serve immediately.

Perfect timing on this post.  My daughter just asked me to find a recipe for the baked apples they do at Cracker Barrel.  Or the apple topping some restaurants use for waffles.  Anyone have one to share?

I have never tried to make the fried apples from Cracker Barrel, but I did find this site online that sells them and it says the recipe is on the back of the jar!  They may even sell it in the Cracker Barrel restaurant store.

I did some searching and found this for you.

 

Cracker Barrel Fried Apples

(SERVES 6

Ingredients

Directions

  1. In a medium skillet, combine the 2 cups apple juice and sliced apples.
  2. Simmer gently until apples are fork tender but not mushy, turning apples frequently.
  3. Remove apples from juice using a slotted spoon and place in an oven safe dish.
  4. In a blender, combine the remaining 1/2 cup apple juice, cornstarch, apple pie spice and sugar.
  5. Blend a few seconds until smooth.
  6. Whisk mixture into hot apple juice in skillet and cook, stirring constantly on medium high heat until it bubbles and becomes thickened and smooth.
  7. Pour thickened mixture over apples and serve.
  8. Please note the cooking time is an approximate
