Chicken Alfredo Rice Casserole

 A friend  gave me this recipe. I recently tried it and we liked it. I used the homemade Alfredo sauce.

Chicken Alfredo Rice Casserole

Alfredo sauce (below) or 1 jar prepared Alfredo sauce
1/2 cup milk
2 1/2 cups cooked rice
2 cups cubed cooked chicken
1 cup frozen peas or corn
1 cup soft bread crumbs
1 Tablespoon butter, melted

Preheat oven to 350 degrees . Prepare Alfredo sauce. In large bowl, combine Alfredo sauce and milk. Stir in rice, chicken, and veggies. Transfer to 2 quart baking dish.Bake, covered, for 30 minutes. Uncover and stir. Combine bread crumbs and butter; sprinkle on top.Bake, uncovered, for 20-25 minutes more until heated through and crumbs are golden brown.Let stand five minutes before serving. Serves 4.

Alfredo Sauce
8 oz cream cheese, cut in cubes
3/4 cup grated Parmesan cheese
1/2 cup butter
1/2 cup milk or half & half

In large saucepan, combine cream cheese, parmesan, butter, and milk. Stir constantly over medium heat until smooth.

Mmmmm!  This sounds good.  I wonder if it would taste ok using leftover ham?  I'll have to give it a try!  Thanks!
