I keep looking for a really good recipe and haven't found it yet. I'm trying this one today.
This is from a cookbook called At My Grandmother's Knee. I'm trying it today.
Grannie"s Mac "n" Cheese
2 cups elbow macaroni, uncooked
1/2 stick butter
2 1/2 cups shredded sharp Cheddar cheese, divided
2 large eggs
1/2 cup milk
1/2 teaspoon dry mustard
1/4 cup minced onion
1 tablespoon paprika
Preheat oven to 350 degrees.
Cook the macaroni according to package directions. Drain the macaroni well and then return it to the pot you cooked it in. Add the butter and stir until completely melted. Add 2 cups of the cheese.
In a separate bowl, whisk the eggs with the milk. Stir in the mustard and onion.
Pour the egg mixture over the macaroni and stir well. Pour the macaroni into a lightly greased 8-inch square baking dish. Top with the remaining 1/2 cup of cheese and sprinkle paprika on top.
Bake uncovered for 30 minutes, or until cheese has melted and browned.
