Can a woman be a stay at home mother without a husband or significant other? If so, how?
In my opinion, a stay at home mother is a married woman who has a husband who financially supports them completely.
Someone doesn't need a husband to have income. She might have a trust fund, receive SSI, receive support from friends or family, income from rental properties...there are a million ways people "get by".
A sahm is simply someone who doesn't work for money outside the home. That's it. Where she gets her money from doesn't change that.

Perhaps she has significant investments that make money for her.
Perhaps she is heir to wealth and doesn't have to work for her money.
I don't think her income has to come from a spouse for her not to work. I would just think that she would need income from somewhere.
