Couscous...Quinoa...Tofu, oh my!

If any of you enjoy these foods, how do you enjoy them?

If you tofu, how do you like it prepared?

If you quinoa, what do you serve it with, and do you add anything to it?

If you couscous, do you serve this as a rice/starch? Do you doctor it up at all?

I have a budding vegan in my house and this is ALL NEW to me. If any of you wise moms can add some tips, I would be eternally grateful.

And why does healthy food cost so much? Bah, that is a S/O...I need help now.

P.S. Quinoa isn't even IN spellcheck.

I love couscous, and I serve it as a starch.

I've tried to like quinoa, but I just don't.

Tofu... I can take it or leave it.

I don't do quinoa or tofu, the first just doesn't taste like anything, the second has a weird texture.

However, we all love cous cous. I sometimes use the stuff that comes in a box, with seasonings and it is good, but regular cous cous (not quick cooking kind) with roasted veggies makes a lovely meatless meal too.

I have a box of couscous in the cabinet I have never opened. And it's been there a long time.

I have tried quinoa, and it just is not working.

I do eat tofu. I have marinated it and fried it with other foods and it comes out fine.

Check vegan meals on Pinterest. There is also a site called "Ordinary Vegan." There are some really good  meals out there, and some really crappy ones.

http://www.vegetariantimes.com/recipe/crispy-gnocchi-with-brussels-sprouts-and-mushrooms/ -- You can use Earth Balance "butter" -- it's vegan. Delicious recipe.

http://indianfood.about.com/od/vegetarianrecipes/r/muttermushroom.htm  This is good, too.

There are some good eggplant parmesan recipes -- that is the only thing I use vegan cheese in (I only use vegan cheese to cook; otherwise, it is nasty) and I replace regular milk with almond milk.

I don't know why this stuff is so expensive. The healthier I eat, the more expensive it is, unless I get to the farmer's market for my vegetables.

Yes. When we were in Turkey I first tried couscous and loved it.  Then when we were in Sicily, OMG...  Even better.

Never tried it.

We're Scandinavans. It's all about swedish meatballs, lingonberries, lefse, lutefisk, etc.

We have branched out to include Mexican,Chinese, and French cooking though. :)

I'm vegetarian so we have all of the above regularly. I'll try to get back later tonight with a more in depth reply.
