A delicious, cheap, easy, filling recipe

I've been looking for ways to stretch our food budget and sometimes it's hard because my dear husband is NOT a fan of soups or stews. However, he and I both enjoy this one, which is best served over rice. I cook it in the crock pot.

32 ounces chicken broth(2 cans)

2 pounds chicken breasts, cut in half

1 can diced tomatoes

1 can beans(kidney or white beans, or both!)

1 1/2 cups sliced carrots(or baby carrots)

1 small onion, finely diced

1/2 bag broccoli cole slaw(or 1/4 head of cabbage, shredded, or 1/2 bag of bagged coleslaw)

1 tsp Thyme

salt and pepper to taste


Combine all ingredients in crock pot and cook on low 7-8 hours OR high 4-5 hours, until chicken is falling apart. Use fork to shred chicken. Serve over rice and noodles.

Makes 8-10 servings.


I spent about $8 for all the ingredients, and it makes a TON.

We had a recipe similar to this in my ETT class. You  use all the same ingredients(except the carrots & slaw) but addsome chili powder and salsa-what ever kind your prefer. I dumped a lump of sour cream in mine. Then we crumbled up a taco shell for a great meal. Your right itis super cheap and make A LOT!! Umm-I am going to make that tomorrow!

I am not sure if you and your hubby like kilbasa and sauerkraut....but this is my mans fav dish and it is budget friendly and goes a long way too....

2 pkg or 1 kilbasa sausage sliced into 1/2 inch

5 potatoes cut into quarters

1 lg. can of sauerkraut

4 tbsp butter

add the potatoes into a large pot and cover with water just to the top of potatoes

then add the butter

then add sausage on top

then dump the entire can of sauerkraut on top

bring water to a boil, reduce heat to med and put the lid on and let boil gently for about 1 1/2 hours. or until the potatoes are soft.

Mix in pot with a little salt and pepper...and done!
