Ah the carseat puzzle. I would probably just take it to a carseat inspection (around here they do them at the firehouses) and have them help you. I'm pretty sure the safest would be to put the two smaller children in the middles of the middle and back seat, then put the oldest next to one of them. If it makes it too hard to get them in and out, put the two smaller ones in the middle row and the oldest in the back row... my oldest is also 5 and can correctly put his seatbelt through his booster as well as buckle it himself, so having him in the very back row would be fine since he requires the least amount of help. If yours isn't in a booster yet, he can probably still work a harness if he's taught how. Good luck!

Well, it sounds like you've pretty much figured it out (congrats on that... three carseats is pretty tricky!!!). The getting out part was always hardest for our oldest as well when he was still in the harness too, but I think having him in the back is still the best since he can at least get in and out (after help with the buckle) without help whereas the younger two still need support with that. I fully recommend the car seat group. Just keep in mind that you cannot borrow a latch anchor from the side seats for the middle, so unless your car has 3 sets of latch hooks you will have to use the seat belt to buckle in the middle seat.
