I have leftover meatloaf, what can I make with it for dinner?

My mom sent home leftover meatloaf, and it is pretty crumbly, so I thought maybe I can make some other meal with it. It would have to be something I had on hand. Maybe add spaghetti sauce to it and serve over pasta.  Or maybe add a can of mushroom soup and serve with noodles?- is there a recipe like this?

Although there is rarely any leftovers when I make meatloaf, my husband and son make sure of that, if there is I make it into another of their favorites; hot meatloaf sandwiches with mashed potatoes and whatever type of sauce and/or gravy served originally with the meatloaf usually brown gravy or red sauce.

1 mom liked this

We do meatloaf sandwiches-hot or cold. If they are hot we usually do some mashed potatoes too.

How do you make your goulash? I have been experimenting to improve my mom's recipe.

Well aside from the meat, I use

elbow/macaroni noodles or corkscrew pasta (can be plain or veggie style)
add corn, diced tomatoes, fine diced green pepper (just enough for flavor),  garlic powder, fine chopped onions, a dash of black pepper, basil, oregano, pinch of sea salt and spagetti sauce
