I have leftover meatloaf, what can I make with it for dinner?

Posted by   + Show Post

My mom sent home leftover meatloaf, and it is pretty crumbly, so I thought maybe I can make some other meal with it. It would have to be something I had on hand. Maybe add spaghetti sauce to it and serve over pasta.  Or maybe add a can of mushroom soup and serve with noodles?- is there a recipe like this?

Thank you. I should do this.  Right now I have no potatoes, but shephard's pie would be good.

I ended up making what I guess might be called a form of goulash.  I had cabbage, squash,  a jar of salsa, onion, noodles and some cheese. It make a delicious tossed together casserole.

Quoting ArcticFire:

you can also use it to make tacos, tamales or goulash

...goulash is super easy and filling

I didn't even think of this. It would have been good.

Although there is rarely any leftovers when I make meatloaf, my husband and son make sure of that, if there is I make it into another of their favorites; hot meatloaf sandwiches with mashed potatoes and whatever type of sauce and/or gravy served originally with the meatloaf usually brown gravy or red sauce.

Do you have Bisquick or Jiffy mix?  If so, make the pie topping mix, add a little sat and pepper to the flour mix for taste and use that instead.  Makes a great pot pie.

Chili would be a good choice.  I ended up just dumping in all of the fresh veggies that we had plus noodles and salsa.
