Advice for Moms Advice for Moms

Need help with finding new meals for my lactose intolerant, vegetarian, 5 year old.

My daughter and I are both vegetarians, I've recently become a vegan, but I wasn't planning on switching her to a vegan diet with me until I feel I have it all down, balanced, and experimented with.

But she recently became lactose intolerant (it runs in my family), which I'm ok with, seeing as I believe its healthier in the long run. None this less, this has thrown me a bit when it comes to meal planning for her, as I was banking on having a little more time and experience before juggling the switch for both of our diets.

I'm curious to see if anyone, expecially anyone with experience with something similar, had any suggestions? Anything from just lactose-intolerant friendly recipes, ideas, suggestions to vegan ones would be most welcome for DD.

If she's truly lactose intolerant, and not milk-allergic, it's not a problem for her to have certain dairy foods. You can find lists online of the lactose levels of different dairy products. For instance, yogurt with active cultures is very low in lactose, so when eaten with other foods, the enzymes used to digest other sugars will work on the tiny amount of lactose in the yogurt. Cottage cheese is also very low in lactose. Mozzarella is digestive torture, but aged cheeses are also very low in lactose. This can give you time to find more ideas without making your kid gassy and uncomfortable in the mean time.

Breakfast:
Oatmeal with a chia seeds face on it  and Almond milk

 


lunch is :

English muffin with tofutti cream cheese, raspberries and blue berries on top
Carrots and hummus
and a bowl of almonds or sunflower seeds

Her favorite dinner is
Chick-pea spinach stuffed shells (Yum!)

I have a box of recipes if you need more suggestions!

Oh we had the most amazing Tempeh burgers the other night, Delicious!

Well I just pulled out my recipe and it is white bean and spinach, we had chick pea pattys the other night, that is what i was thinking about. ANyway, here is the recipe for White bean and spinach stuffed shells:

1 bunch of spinach sliced thin
4 Garlic cloves pressed
1 tbsp EVOO
2.5 cups cooked white beans
1/2 cup raw cashews
Lemon zest
1.5 tsp onion powder
1 tsp oregano
1/4 tsp mustard powder
3/4 tsp sea salt
1/4 tsp Apple Cider Vinegar
3.4 tbsp rice or almond milk (We used almond)
Pepper
22 jumbo shells
3 cups of tomato sauce


Cook shells Drain
Preheat oil over med. heat. Add garlic and let it sizzle for about 30 seconds then add the spinach and cook till wilted (1-2 minutes)
Blend up cashews into a powder.
Mix beans, zest, onion powder, basil,orageno, mustard powder, salt, vinegar,and milk till smooth.
Fold in the spinach.

Stuff shells, put in pan on top of 1/2 the sauce, pour rest of sauce over it and  bake at 350 degrees covered in foil, for 30 minutes.

hun.. youtube vegan recipes kids love! We watch them together and then choose a new meal every week. make it your little thing you two do :o) I reccomend the vegan vanilla cupcake recipe to start! Soooooo good!

Wow!!! Thank you all so much for coming through like this! I'm extremely grateful <3 And YUM to everything mentioned! Definately making a list and trying everything out! I love the idea of youtube-ing vegan recipes, my DD  loves to help cook/bake
