Sirloin is dry, and tough as an old shoe.  Grill it, or sear in a carbon steel pan, for LITERALLY ONLY a couple minutes per side.  It will still be bloody, but at least you will be able to chew it.  I am NOT a fan.  We usually eat ribeyes, or NY strips.  Sides are any veggie, and any salad.  We are low carb.

I would think these would be good in a stew or stroganoff.

We normally don't use the medallion but I would suggest to use a very hot grill pan and grill them for flavor with a dry rub.  I would do a side of green beans or salad with a sweet potato mash

We don't use the medallions since I can nver get them to where they weren't tough. Sides: potatoes, green beans, salad.

My husband used to cook the meats when we used to eat them and he always said good timing was the key. Never overcook.

Ive never fixed it but salt is a good meat tenderizer.
