bring some toys, if possible, ones they've never seen before. Bring 1 comfort item to help them sleep at night. Make sure you have a sippy cup/bottle and ask the stewardess to fill it up with juice/milk/water before take off so they can drink which will help their ears pop and adjust to the pressure change.
Definitely pacifier or bottle or cup to suck/chew on to help with pressure. If you want to bring a stroller - do it! They are so helpful in the airport and you can gate check them. No problem. Toys that can be chewed on - plenty of diapers and a change (or two) of clothes in case of accidents.
