breastfeeding cookies :-)

Okay, so I am not claiming in any way that these are healthy, but they are really good!  I guess it is the oatmeal in them, but If I eat some my milk supply jumps by the end of the day.  So I just call them breastfeeding cookies.

Banana Oatmeal cookies

This makes a really yummy moist almost bread like cookie!
INGREDIENTS
3/4 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup mashed ripe banana
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3 cups rolled oats
1 bag of chocolate chips




DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together shortening and brown sugar. Beat in egg and mashed banana, then stir in vanilla. Combine flour, baking soda, salt, cinnamon, stir into the banana mixture. Mix in rolled oats and walnuts. Drop by rounded spoonfuls onto prepared cookie sheets. Leave room for spreading.
Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on cookie sheets for 5 minutes before transferring to a wire rack to cool completely.

HOw do you find the time to bake and take care of a newborn AND 6 other kiddos? you amaze me!

I copied the recipe down - excited to try it!

 ive been looking for something to eat with oatmeal in it other than oatmeal to boost supply.thanks andee.i am def gonna make these

I make a cookie thats quite similar. 

1 1/2 c. whole wheat flour
1 3/4 c. oats (I do 3c oats and make sure they're steel cut)
1 tsp baking soda
1 tsp salt
3/4 c. almond butter or peanut butter
1/2 c. butter, softened
1 c. flax 
3 T brewer's yeast (You can add as much of this as you want.. I do 6T)
1/3 c. water
1 tsp cinnamon
1/2 c. sugar
1/2 c. brown sugar
2 tsp vanilla
2 large eggs
2 c. (12oz) chocolate chips
1 c. chopped nuts of your choice (optional.. I have also done sunflower seeds)

Preheat oven to 350 degrees Fahrenheit

Combine flour, baking soda, cinnamon and salt in a bowl.
In a large bowl, beat almond butter, butter, sugar, brown sugar, vanilla, brewer's yeast, flax and water until creamy.
Mix in eggs.
Gradually beat in flour mixture.
Mix in nuts and chocolate chips.
Add oats slowly, mixing along the way.

Place balls of dough onto greased baking sheets or baking stones.

Press down each ball lightly with a fork.
Bake 12 minutes.
