I NEED LOTS and LOTS of side dish ideas!

 We're having people over tomorrow and Friday for dinner.

I know I'll be grilling wings and steaks (not sure which days yet), but I need side dish ideas. Normally I'm good at this, but I don't want to do the SAME OLD things, so hopefully you ladies can give me some good ideas!!!

ANYTHING, I'll TAKE IT! hehehe

 This isn't very original, but I'm gonna say home made mac-n-cheese! I LOVE mac-n-cheese! Lol.

Brussel Sprouts, I have been craving them forever lol.

 We're grilling this weekend and having bush's grillin beans and dh wanted corn on the cob but we can't find any so I have to find another veggie!!!

 mmm potato salad.. home made mac n cheese, green bean casserole, pasta salad (tri color noodles, with fresh veggies, cheese and peporoni mixed in, then add a little italian dressing to taste, SOOOO GOOOOOD) Roasted potatos, roasted corn on the cob, fresh green beans drizzled with olive oil and garlic salted, then baked.. hmmmmm i am getting so hungry for bbq for some reason!! lol

My husband's favorite side dish with steak is saffron rice - you buy the little yellow packets in the rice aisle.  I like baked potatos - you could do baked potato skins to make it a little different.  Or bacon-wrapped asparagus, since asparagus is in season.

I'm not good with spring dishes. Fall is my element LOL.

Here are some that appeal to ME though:

Black bean and Quinoa Salad (Epicurious has GREAT recipes)

Grilled zucchini and/or yellow squash (sprinkle with a little salt and pepper and it'd go great with steak and wings!)             (Oooh, you could grill sweet peppers too!)

Or just do a big veggie roast......cube stuff like sweet potatoes, red potatoes, turnips, parsnips, and things like that. Coat 'em in oil, season and bake. That one's simple!

I've never tried this before, but it LOOKS awesome (though I'd probably modify and use breadcrumbs or something instead of Grapenuts LOL.) Summer Veggie Bake

i have lots of side dish ideas but according to my hubby my food is gross! I make a marshmellow salad with marshmellows and lots of fruit and sour cream, i do a salad, i do green bean casserole and i have many more

Since you are grilling steaks I will give you our favorite recipe to go with it :)

You make individual servings and cook them on the grill in foil packets.

You Need:

Aluminum Foil

New Red Potatoes

Onion

Butter

Variety of Spices (Depending on your tastes. I use Dill weed, Thyme, Garlic, Paprika, Seasoning salt, and black pepper)

You dice the potatoes up (small squares). Cut Your foil into about 12" x 12" squares, enough for one per person (or one for two kids). Put about 2 table spoons of butter in the center of each foil square. Place your potatoes on top of the butter. I typically use about 1-2 potatoes per person, depending on the size. On top of the potatoes add the various seasonings you decided on. Then you pull the edges of the foil up lengthwise and fold the edges over, this should make the foil into a tube almost. After you fold it lengthwise, fold the ends up by taking about a half inch of the foil and fold it over itself. It should look similar to this: [------]. You put these on the grill about 5-10 minutes before you start the meat. When the meat is done, your potatoes should be done and everyone has their own little packet!

If you are grilling, all sorts of grilled veggies are good - asparagus, corn on the cob, zucchini, bell peppers...

I also like roasted carrots and parsnips - just coat with olive oil, sprinkle with salt and thyme and oven-roast for about 15 min.
