Breakfast:

Scrambled eggs in whole wheat tortilla with some low fat cheese and salsa

Whole grain cereal with low fat milk and sliced banana

Whole wheat bagel with light cream cheese and sliced strawberries

Snack

Low fat cottage cheese with a side of fruit

A slice of peanut butter toast with a piece of fruit

A spinach salad with some pasteurized feta and an olive oil dressing

A cheese stick and an apple

Lunch

Grilled Chicken Salad

Chicken wrap- a whole wheat tortilla, grilled chicken breast, tomato, lettuce, and some light ranch (there are GREAT greek yogurt based ranch recipes online that don't taste like yogurt....I hate yogurt so I couldn't eat it if it did).

Whole wheat pasta with sliced grape tomatoes, mozzarella and olive oil dressing

Tuna salad sandwich on wheat (you can safely eat 2 servings of Chunk Light tuna per week) with some fresh fruit on the side

Fat free refried beans and shredded cheese on a whole wheat tortilla

Dinner:

Spinach and Cheese whole wheat lasagna

Whole wheat spaghetti with lean meat sauce, spinach salad and garlic bread

Grilled chicken breast, grilled zuccini and grilled sweet potato

Tacos (lean meat, whole wheat tortilla, low fat cheese, light sour cream, avocado, tomato, onion)

Baked Ziti with whole wheat pasta, sauce and cheese

Brown rice stuffed bell peppers (brown rice, black beans, onion, bell pepper, tomato sauce, and if you want meat...lean ground beef or turkey stuffed in bell peppers and topped with a little cheese. Have with avocado slices)

I've been grilling some chicken breasts and having some hummus with whole grain pita, on the side.

I also know that chicken is getting old!!

So, I also use some ground turkey and make hamburger sliders. Lunch or dinner.

I precook a lot of chicken and use it creatively. Cooked in wraps, on toast, in a salad, ect.
