My 4 year old is in school but she has to bring her own lunch, and while it's not difficult to make her a lunch, it seems that I am packing the same things every week. So, here is what I came up with. We bought a juicer back in December and with it came a ton of recipes for sugar free muffins. Now, my daughter looooooooves muffins so I realized that muffins would be a perfect addition to her lunch pack since the recipes utilize the pulp of the veggie/fruit that I have juiced, along with some of the juice. I'm so excited. Monday, I am going to pack her a carrot muffin, chicken chunks, and some fruit.
Another thing.... These muffins can be made a head of time, and frozen. Healthy and time saving.
