what are some horse toys or things that they have and love?
My 3.5 year old daughter has been obsessed with horses for a long time now and still is! When she turns 4 she is getting her whole room turned into a horse/cowgirl theme. I'm thinking of Christmas though. Not sure what the 'hot' items are for horse lovers. Maybe there aren't any lol.

Target has a ton- valances, boarders, wall hangings, bedding, lampshades... just enter "Horse" into the search window.
There's also this cute set on Walmart's website. Plus, it's reversible in a cute plaid pattern quilt that can kind of grow with her if she tires of the horses. :)
My DD1 loves My Little Pony and horses.
You could get those Breyer Horses and put them up high on shelves in her room until she's older and won't break them. They'd look cute in a horse themed room! :)
