slow cook at 300* or on low(for those who dont show temp)

16 oz bag of dry bean soup mix ( should have 15 bean soup on bag)

1 med onion chopped

1 teaspoon garlic powder

1 teaspoon celery salt

2 stalks celery chopped

1 bay leaf

1 dash cayenne pepper

1 tsp ground black pepper

1 smoked sausage, cubed

optional( i added and it add a great flavor) 2 tablspoons of bacon bits

1. Wash beans thoroughly(no soap--just rinse well in water.

2. put beans in bowl and soak overnight in water--make sure to have plenty of water they do expand--changing water 2 or more times, drain. ( I soaked a total of 36+ hours--duye to my mess up)

3. In crock pot, cover beans with water about 1 inch deeper then beans. add all other ingredients except bacon and sausage.

4. cover and cook on high for 1 hour. then turn to low and cook overnight. stir once or twice.( i cooked it from 6pm until 4pm)

5. about one hour before serving, check texture of soup. if it seems to thin, mash the beans a bit, then add the bacon bits and sausage.

6. serve with corn bread, bread or rice.


this recie freezes well adn is usually thicker from reheating.

it is the best tasting soup I ahve had in a long time

I copied this recipe. I hear that beans are very healthy and am trying to incorporate more beans into both my children's daily diets. Thanks for posting this!!!! :-)
