I made Mathias' cake(s) on Friday (it's 1am Saturday as I'm writing this).  I think I finished decorating by the time Leno was over...

I have a cupcake mold that makes a train with engine, 1 car and caboose, which I really wanted to use for Mathias' birthday.  However, it only makes 12 cupcakes, and we're expecting 30+ people for his party!  So, I made thin sheet cakes, using jellyroll pans, and put the cupcakes on top of one and had fun decorating.

I dyed the frosting with dry jello or pudding mix, depending on the color I needed.  Red is cherry, green is lime, blue is berry blue, and the browns are either chocolate, chocolate/butterscotch, or chocolate + black decorator icing.  I decided food coloring is way to expensive, and I could have more fun with colors with jello, which was on sale!  Plus, it adds a bit of flavor, which is kinda fun.  The tracks are black licorice that I cut in half with MilkMaid caramels for RR ties.  The dirt/gravel is chopped up Krackel and Mr Goodbar.  The smoke is mini marshmallows!  Most other accessories are caramels and/or licorice, and then all the letters/numbers are from the "cake decorator" sets from Safeway.

I'm sure he won't appreciate all the work I put into his cake, but I had tons of fun doing it!

Jun. 21, 2008 at 1:07 PM Adorable!!!  I can appreciate all the work because I made Kaden's cake last year (I only made one) and it was hard!  But very rewarding!  :)  I love the idea of using Jello to color the frosting - brilliant!!!!!
