HI! My young cousin has it. She was diagnosed when she was just about 2. She will be turning 11 in a couple of weeks. =) She stays with us alot. My mom and I are always looking for recipies etc to make while she is here. She is also going to a group camp for kids like her. That way they can all eat the samethings, learn more about nutrition and more in depth reading label reading. She is VERY excited to go! If you let Godfathers pizza, that is here in Iowa, know that you will either becoming in in acouple of days or place an order they will have a crust ready to go. It also depends on how sensitive/allergic she is too. Mariah is VERY allergic. She can't have ANY cross contanimation at all, oh i can't spell tonight either! =)
To start you off here is a quick and YUMMY peanut butter cookie recipie:
1 egg
1 cup of sugar
1 cup of peanut butter
Mix, make balls moosh with fork a little bit for the "design" bake at 350 for 10-15 min. It all depends on how big you make the balls. PLUS you can make monster cookies with the same recipie. She CAN have M&M's and you can put mini recess pieces in the center or the famous brach's chocolate star. Bake. EVERYONE can enjoy.

My neice is also gluten-free due to celiacs disease. She has adjusted nicely after awhile. She is now 22 and in her final year of college! She learned to read labels and such. She found out her final year of high school so basically she learned to live with it on her own in college! Many restraunts even have gluten-free foods...just ask for the menu's! They don't always advertise but just ask them! It is becoming more and more common!! I ask her what she eats and such!!! I know she can even eat pizza certain places now! She was very excited and she lives in Illinois too...she goes to Eastern Illinois University! Good luck!
