zucchini bread without nuts

Anyone have a recipe for this. I have a ton of zucchini that needs to get used. So If you have this or any other recipe ideas for zucchini I would really appreciate them. Thanks

Zucchini Bread II

Yields: 24 servings
"Brown sugar contributes to the richness of this traditional loaf that 's peppered with nuts and raisins."
INGREDIENTS:
3 eggs
3/4 cup vegetable oil
1 2/3 cups packed brown sugar
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons ground cinnamon
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup raisins
1/2 cup chopped walnuts
DIRECTIONS:
1. In a large bowl, beat eggs well. Add oil, brown sugar, zucchini, and vanilla; stir well. Blend in flour, cinnamon, baking powder, soda, and salt. Stir in raisins and nuts. Pour batter into a greased and floured 9 x 5 inch loaf pan.
2. Bake at 325 degrees F (165 degrees C) for 1 hour. Cool.

 

I substituted applesauce for the oil, and used 3 mashed bananas instead of the raisins and walnuts (I don't like nuts in my bread anyways!). It is SOO yummy! And Ashlynn loved it too. The recipe makes alot, I made a big pan for work, and 5 mini loaves. YUM!

Oh, and I also wanted to say I had a HUGE zucchini, I grated the whole thing and placed the rest in a freezer bag for a loaf in the future. And I highly reccomend allrecipes.com that sight is the best!

I got a REALLY good sounding zucchini recipe this weekend... you take a big, big zucchini, (Or a few smaller ones) and cut in half the long way... scoop out the seeds, then mix together a pound or so of sausage, (I like the sweet Italian sausage) and some salsa. That way, you can make it as hot as you want it, and put the sausage and salsa in the ditch where the seeds were. Bake at 325 for an hour or so, and then put shredded cheese on top, and put under the broiler until the cheese is melty and slightly browned. Serve with a little sour cream, and some tortilla chips, and you just eat the whole thing, right down to the skin. It's so yummy. Even my husband will eat it, and he "HATES" zucchini! LOL
