We've had a big week here at the Clark household. Joey, my oldest son, started 2nd grade this week. We've been getting into the back to school routine. Thankfully I had made a batch of goody filled biscuits over the previous weekend or breakfast would have been one of those frantic run around the kitchen things or simply a bowl of cold cereal! So far the back to school routine hasn't been too bad but then again, the homework is not in full swing yet either.

The other big event was my youngest son's second birthday. He loves loves loves Spongebob so that was the cakes theme. I wanted to make it myself since we live in a rural town so going to a bakery isn't that feasible. I made the cake from a mix but the tricky part was finding a way to decorate it! I searched online for decorating ideas but none of them looked easy enough for a beginner until I found an easy marshmallow fondant recipe online at http://whatscookingamerica.net/PegW/Fondant.htm. That was a life-saver (just be sure to read all the comments and all the tips and tricks before you try it). Everyone loved how the cake looked and it even tasted great!!!! We just had a small party with the family complete with Krabby Patties and Coral Fries (burgers and crinkle cut french fries) and plenty of gifts for the birthday boy!

We also started potty training so we've had a real busy week! I'm sure I'll be looking up tips and advice on potty training! Just makes me wonder what's in store for next week!
