Sigh Last January we had both of our sons allergy tested at the Born Clinic in Grand Rapids. We walked away with a list of over 25 sensitivities for our oldest alone! Our youngest had 17, but his are a little tricker beings that they are mainly grains. So, over the past year we have rearranged our life and eating habits and the results are amazing! It was a little difficult at first, but when you know that you are doing it for a better life for your children…you’ll do almost anything.
We live on a very conservative budget and it was quite a shock the first time we checked out of the health food store! But we have discovered where the best deals are and what local stores (like meijer of all places) have the best selection. I tried my hand at a small garden this year, and it helped. We (luckily) don’t have any reactions to tomatoes, so with the help of some fresh basil and amaranth, corn, & quinoa pastas…we have some pretty awesome spaghetti and goulash.
In additon to learning what foods to cook with, I also had to re-think how I was serving the meals! For 6 months we lived on a rotation diet…every 3 days, something different each day…no repeats on any ingredients!....I am so glad that is over. I still kind of make my menus that was, I guess out of habit, but its for the best anyways.
I am always looking for new recipes and ingredients to try. Both of the boys are such troopers. They hardly ever complain, and have picked up some good snacking habits. Fritos and refried beans, pear slices, organic peanut butter…there are some really great snacks if you just think about it. We don’t eat pop tarts, crackers, cookies, or any other kind of junk food..other than mommy and daddy’s stash. We loved cheerios as a snack on the run, well they have the same thing but made out of Amaranth flour. You put some fresh strawberries or bananas and some almond vanilla or in Nate’s case Hemp milk…you’ve got a great breakfast.
