A couple ideas for those of you with large families. Family of 8 myself.
Roast
- 4lb roast , any cut you like
- 1 and 1/2 lbs. small red potatos
- small bag baby carrots
- 4 family size cans cream of mushroom soup
- seasoning salt
- pepper
In a large crock pot place roast. Dust with seasoning salt and pepper. Add cans of soup, 2 on each side of roast. Slice potaos in half and spread around roast. Add carrots whole. Fill with enough water to fill half way, you can add more as needed.
Cook for 8 to 16 hours on low. If cooking for longer period wait untill half way to add veggies. This way the meat is supper tender, but the veggies aren't mush.
Bake a few rolls to sop up the gravy and enjoy
Chicken and Rice with Gravy
- 5 boneless/skinless chicken breast
- seasoning salt
- garlic salt
- pepper
- 4cups instant rice
- 4cups water
- 3 cans chicken gravy
Preheat oven to 350. In large baking dish place chicken. Dust with seasoning salt, garlic salt, and pepper. Bake for 30 to 50 minutes depending on how thick slices are.
In large bowl combine rice and water. Nuc for 10 minutes, then cover with plate untill chicken is ready.
Once chicken is done, in medium sauce pan simmer gravy
You can dice chicken and mix into rice, or place each breast on a bed of rice. Cover with gravy and enjoy.
Mac and Cheese
- elbow mac
- cheese
- milk
Equal amounts of cheese to box of mac. Cook elbow mac and drain. Return to pot. Over low heat add slices of cheese (3-4 at a time let melt before adding more) and 1/4 cup milk. Stir continuesly. If need be add more milk to right consistence.
Easy Shepards Pie
- 5lb bag potatoes
- large bag frozen corn
- 2lb ground beef
- 1lb aged reserve cheese/grated and halfed
Preheat oven at 350. Peal and boil potatoes. While potatoes are boiling, brown ground beef and drain. Put into large bowl and add corn, cover and let sit. Drain potatoes and mash. In a large baking dish layer mashed potatoes, half cheese, meat and corn mix, Mashed potatoes, and half cheese to top. Bake until melted on top. Serve
