You have got to try this super easy & even faster recipe! My family LOVES it!! You can use the spiral pasta or penne or elbow macaroni (just add an extra 1/2 cup of elbow if you use it). You can use low carb pasta and reduced fat cheese & mayo and skim milk if you like! You can double for a 13x9 pan.

Cheese Chicken Spirals

 

1 1/2 cup uncooked spiral pasta

1/2 c mayo

1/3 cup milk

1/2 tsp salt

1/2 dried basil

2 cups canned mixed veggies, well drained

1 1/2 cup cooked cubed or shredded chicken (or turkey)

1 1/2 cups shredded cheddar or Monterrey jack & cheddar mix, divided

 

Cook noodles by package directions.  In a large bowl, combine the mayo, milk, salt & basil. Stir in the veggies, chicken & 1 cup of the cheese. Drain the pasta & add to the chicken mixture.

Spray a 8x8 glass dish with non-stick spray, pour mixture into the dish.  Sprinkle the remaining cheese on top. Cover & microwave on high for 4 to 5 minutes or until heated through & the cheese is melted. Let stand 5 minutes before serving.
