I'm not too good in the snack department, so I've been researching and have found some recipes to try for Landon. I can't wait to give them a try!
YOGURT CEREAL BARS
2 cups corn flakes - 3/4 gluten free flour - 1/4 cup firmly packed brown sugar
1/2 teaspoon cinnamon - 1/2cup vegan margarine
1 cup flavoured coconut yogurt (banana/strawberry etc..) - egg substitute for
2 tablespoons gluten free flour
Preheat oven to 350F
Combine cereal, 3/4 cup flour, sugar and cinnamon in a small bowl.
Cut in butter or margarine until coarse crumbs form.
Press 1/2 the mixture firmly into the bottom of a greased 8inch square pan.
Mix yogurt, egg and 2 tablespoons flour in another small bowl.
Spread over cereal mixture in pan and then sprinkle the remaining cereal mixture on top
Bake for 30 minutes or until golden brown; cut into bars when cooled.
ENERGY BALLS
1/4 cup finely grated parsnips
1/4 cup gluten free Granola*
1/4 cup raisins
1/4 cup sunflower, pumpkin or hemp seeds
1 Tablespoon honey
3 Tablespoons SunButter or Golden Pea Butter
Mix and roll into balls. Easy carrots in the tummy!
*Granola makes these Energy Balls more tasty and adds a nice crunch!
QUICK -N- EASY SMOOTHIE
1 cup 100% nothing added fruit juice
1 cup plain, vanilla or fruited coconut yogurt
Place yogurt and juice in lidded container/cup and shake until mixed well
Pour into Toddler's cup

BTW, you can make awesome homemade granola with this: http://www.glutenfreeoats.com/ and some blackstrap molasses if your son can eat them. I *love* homemade granola to the point of not being able to stand any store-bought crap. :)
Basically you mix oats with blackstrap molasses until the oats are coated. (usually about 1 tablespoon molasses to 3 cups of oats.. It takes about 5 minutes to mix them in as you keep having to break up the oat clusters) Bake at 400 until crunchy. Mix in dried fruits (raisins, etc.) It's delish. :)
