This is tasty, fast, and convenient. If you make it vegetarian, pretty much all you have to do is heat the ingredients. I throw in a couple cans of black beans, drained and rinsed, with some chopped onions and oil, and saute for a few minutes, until the onions are transparent. I might toss some chopped sweet peppers in there, too. After the onions have cooked, I dump a can of diced tomatoes with the juice, a can of hominy, drained, one of corn, ditto, some chopped jalapenos from a jar and maybe a little of the juice. Season with salt, chile powder, red pepper flakes, and whatever else you want to chuck in. If you're making it with hamburger, brown that first with the onions before you add the beans. Serve it over corn chips, and top with sour cream and/or grated cheese. Enjoy!

Oliver was born after having suffered a stroke while in his mother's womb. The resulting brain injury is called Dysautonomia (Autonomic Dysfunction). His doctors believe the stroke was the result of the miscarriage of his twin. Oliver is completely blind and his underdeveloped brain stem makes basic physical functions a challenge. In spite of all this, he is a happy, go-lucky, 12-year-old boy, and his mom wants people to meet the real Oliver, not just his medical hardships.
