serves 6-8

4 med potatoes, 4 ribs of celery with leaves,1 bay leaf, 3 cloves garlic, 1 lg yellow onion, clean , (peel) and chop all including top leaves on celery ( lots of flavor there:) add just enough water or chicken broth to cover potatoes and veges-boil for 20 min adding 3 good size pats of butter or marg-a few dashes of poultry seasoning if you have it-salt and pepper to taste-then add enough milk to cover a few inches above the soup .../ to thicken slightly add leftover mashed if you have it-if not add 3 tables of vege oil or olive oil and 3 tables of flour to a bowl ( roux) mix until smooth add to soup to thicken-YUMM serve with hot crusty herb bread then grab a book and curl up and read-if you can stay away from the soup:)

Additions-bacon, *use bacon grease to flour instead of oil-but chop up some bacon if you like or ham-top with cheese and chives-

Sounds yummy!  I wonder what it would taste like if I added oysters, shrimp and clams, hmmm.

Like Emeril says....'OH Yeah Baaaby!!" Seafood would make it so complete:) ...now I want scallops-darn it Della it's cold out and now I must have scallops....TY for ya'lls posts:)

Thought I'd stop back in and see the responses.  I'm sorry, gzee, that my thoughts sent you out in the cold, but at least you're enjoying some yummy for the tummy.  I'm going to make it this weekend.  I can't wait.  Well, I guess I could always turn the AC down to about 55 and have it sooner LOL!

if you add cooking sherry add about 2-3 tablespoons-large peeled and devined shrimp-4-6 *keep tail on while poaching-it keeps the shrimp plumper* it takes 5 min or under-do not add shrimp to BOILING broth-add it to med hot broth-I add about 1/2 cup of milk just to cool it down a tad right before I add the shrimp so it can almost "poach" they never overcook this way-or the same applies to-add 6-8 lg scallops-oysters and clams-1-2 cups oysters a few dozen clams simmer 5-8 minutes-serve with oyster crackers but not in place of herb crusty bread:) the addition of oyster crackers sprinkled on the bottom of your soup bowl is a welcoming taste at the end of your chowder.
