For Christmas this year, my husband and I decided to give each other the gift of time which we spent at the Viking Cooking School nearby our home. My in-laws were able to watch our kids.

The 3-hour class was on the Friday night before Christmas, so an early gift and it worked out well. Due to some crummy weather, the only other person in our class was not able to attend, so it turned out to be a "private" lesson. Here's our menu for "Reveillon: A French Creole Tradition". It was all so delicious... the oysters and artichoke gratin might be my favorite. Never had quail before either.

We just both enjoy cooking, learning new techniques, tasting new foods, and improving skills we have. And, it doesn't hurt to have a professional chef and professional cooking equipment at your disposal!

Definitely will scan a copy of the quail recipe.  It was pretty easy to follow.  We just made the salad today for lunch.  Had my friend Katy (Perrings) Hawkins and her husband over.  They're visiting from San Francisco.
