Oh they turned out soooo good!

(sorry for the poor picture quality...my camera is not working right for some reason...the lens cover keep sticking)


For those who are interested, here is what I did:

I put about a 1/2 cup flour and about 2/3 of a package of taco seasoning in a ziploc bag. Then I dipped the fish (pollock) fillets in bit of watered down egg-beaters (you could use a beaten egg too) and then dropped them into the ziploc and shook it.

I then put them on a sheet pan, sprayed with olive oil spray, and baked at 400 degrees for about 15 minutes.

While those were baking, I took the rest of the packet of taco seasoning and mixed it with some low fat (about 1/2 c) prepared tartar sauce.

Then I made a salsa: I sauteee'd a chopped tomatillo with a little garlic and then added that to some chopped tomato, scallion and cilantro with a squeeze of lime juice.

I heated the white corn tortillas in the same skillet I cooked the tomatillos in and sat them aside.

Shredded (with a knife) some cabbage, chopped some scallion, peeled and sliced an avacado and shredded just a tiny bit of fat free cheddar (mostly because Norah insisted Tacos HAD to have cheese).

I also cooked some rice and added it to a skillet with a little onion, garlic and a can of drained black beans. Sauteed until hot and the onion tender.

I assembled them like this:

tortilla
sauce
fish (broken up)
cabbage
avacado
salsa
small sprinkling of scallions and cheese

Lime wedge for squeezing over.

Rice and beans on the side.

The kids even loved it. It was messy but so worth it! (Doug came home throwing up, so needless to say he has not tried it yet).

Oh yeah...I almost forgot about the avacado seed!

Norah has sort of an obsession with the seeds that make things grow so I thought she would think the avacado seed was really cool. She thought it was some kind of egg at first. When I told her what it was, she asked if we could plant it...I said we could try, but perhaps we needed to let it dry out a little first (honestly I have no idea).

She took that thing, cleaned it off and said she would take care of it until it is ready to plant. She is carrying it around and nurturing it like a mother hen with her egg! LOL. She actually just put inside one of my gloves so it wouldn't get cold while it is drying out!
