Chocolate Chip Meringue Cookies

These are SO good!  The outside of the cookie is smooth and dry and the inside is like a toasted marshmallow with yummy chocolate chips.

I just made them today and my boys loved them!  Of course, I would only let them have one.  Now if only I could just eat one.  I had to hide them in the microwave from myself.  lol


4 egg whites

1 teaspoon vanilla

1/4 teaspoon cream of tarter

1 1/3 cup of granulated sugar

1 bag of Chocolate Chips Semi Sweet

2 tablespoons unsweetened cocoa powder, sifted (optional)  I didn't add this.


Preheat oven to 300F. 

I recommend a Silpat mat but, if you don't have one a cookie sheet will do. 

I'm going to get a Silpat mat for the next time that I make these.


In a large mixing bowl, beat egg whites on super high speed until soft peaks form.  Add cream of tarter and vanilla and mix again.  Scrape bowl.  Return on high speed and add sugar 1 or 2 tablespoons at a time.  Add cocoa powder next if you are going to use it.  Fold in Chocolate Chips. 

Drop onto cookie sheet.  I used my cookie dough scoop.  They don't spread so, you can put them pretty close on the cookie sheet, see the picture below.  Bake 20 minutes or until firm and the bottoms of teh cookies are light brown.

Yummy!
