I threw this together haphazzardly hoping it would turn out to be a muffin. My toddler can't get enough of these!

CINDY'S EASY PUMPKIN MUFFINS
Makes 3 dozen

1 can (29oz) of pumpkin pack/puree

4 large eggs

2 boxes of cake mix (yellow, white, vanilla or spiced)

2tsp vanilla extract

2 TBsp Brewer's Yeast (a complete nutritional supplement)

2 TBsp Flaxseed Meal

11/2 - 2 cups of milk

1 cup of toasted nuts, walnut or pecan (optional)

Directions: Mix dry ingredients together. Add eggs and vanilla, mix. Add 1 1/2 cups of milk, mix. If the mixture isn't a smooth but thick batter add more milk until you reach the desired consistency.

Bake at 375F for 10 minutes, rotate the trays then bake for another 7-10 minutes until tops are golden brown.

An easy and nutritious snack, enjoy!


VARIATIONS:

Lemon Blueberry Muffins
Use a box of lemon cake mix instead.
A can of blueberry pie filling.
2 eggs
1 tsp of vanilla
About 1 cup of milk
1 TBsp of Brewers Yeast
1 TBsp Flaxseed Meal, or more if you want.

Strawberry Vanilla Muffins
A box of vanilla cake mix.
A can of strawberry pie filling
2 eggs
1 tsp vanilla
About 1 cup of milk
1 TBsp Brewers Yeast
1 TBsp Flaxseed Meal, or more.

Baking temp and time is the same as for pumpkin muffins

Awww, you got me all excited because I LOVE pumpkin in baked goods... but I refuse to use boxed cake mixes. LOL  Too much crap in them. I'll send you my super blueberry muffin recipe sometime. It's to die for!

You don't have to use the oil, pumpkin has a lot of oil in it. You can use a different oil if you want, coconut or olive oil.
