Here's a quick, easy, zesty dish - Salsa-Baked Fish, got the recipe from my local HEB, everyone at home LOVED it!  I served it over Spanish Rice (HEB has some convenient Steam-in-bag rice selections).


Salsa-Baked Fish


Cook Time: 10 minutes


Serves 4


Ingredients:


- 1 pound fresh Orange Roughy or other Whitefish Fillets


- 4 teaspons seasoning (salt-n-pepper, steak rub, or other low-sodium seasoning) -- I used a Cajun Seasoning and Rancher's Steak Rub


- 1 jar Black Bean & Corn Salsa


- 1/2 cup shredded Mexican blend cheese


- 1/2 cup crushed tortilla chips


Directions:


1.  Heat oven to 450 degrees Fahrenheit.  Spray a 9 x 13-inch or 7 x 11-inch baking dish with non-stick cooking spray.


2.  Cut fish into 4 portions and place fillets in baking dish.  Season both sides with rub of your choice.  Spoon salsa evenly over tops of fish.


3.  Bake 8 to 10 minutes, or until fish just begins to flake when tested with a fork and color turns from transclucent to opaque (white).  Do not overcook.


4.  Remove fillets from oven; sprinkle with cheese and crushed tortilla chips.  Serve while hot.
