Indian Flatbreads

Roti / Chapati - An everyday unleavend flat bread made with whole wheat flour or chapati flour (a mixture of wheat and malted barley flour, water and salt. (One could mix equal parts of whole wheat flour and all purpose flour for a substitute but they won't be the same as chapati flour.)

Parantha -- A staple but more labor intensive unleavened flatbread than rotis because it is double rolled to make inner layers. It is a whole wheat flatbread with water and salt and a small bit of oil and pan fried. Gobhi Parantha is stuffed with cauliflower before it is cooked, aloo parantha is stuffed with potatoes before cooking, and palak parantha is stuffed with spinach before cooking.

Puri -- a small oil fried puffy unleavened flatbread made especially for a special guest or occasion consisting of whole wheat flour, water, salt and a little oil.

Naan -- is a leavened flatbread made with white flour, salt, sugar, yeast, baking soda, oil, yogurt, water and brushed with ghee after baking in an oven.

Battura -- is a leavened fried puffed bread that puffs much like puri. It is made with white flour, semolina flour (sooji), yeast, sugar, salt, yogurt, water and oil. It is fried in oil and puffs up.

Indian (Native American) Frybread -- is a puffy, lumpy unleavened flatbread made of flour, salt, (sometimes milk), baking powder, water and fried in oil.
