I'm always seeing on any given day a million posts about toddler food ideas. I have no problems getting my LO to eat, however she does have her faves which include collard greens and Brussels sprouts. I figure Once a week or so when I come up with a really neat kid type item at work or a cool recipe I've made up or a day where she's just eaten like a champ I'll write about it.
So today:
Breakfast: half a banana and some shredded wheat
Lunch: a freshly ground honey roasted peanut butter sandwich, mandarin oranges canned in pear juice, about 3 organic pretzels and the other half of the breakfast banana.
Dinner: haven't had dinner yet but I'm fixing a really cool and quick dish. Recipe to follow because it's so quick and easy to fix but sooo good. If you like Italian Sausage.
Sausage and Peppers With Linguine
about a pound of Mild Italian sausage, bought ground or squeezed out of casings.
2 Multi colored bell peppers, of your choice I usually use green for price reasons.
1 small sweet onion
about a pound of linguine
butter, salt and pepper
Cook sausage and then turn up to brown. Cook pasta leave in water till you are done and ready to use. (only a few minutes) Slice the onions and bell peppers into strips and add to the sausage and turn to medium-low let them simmer until the onions and peppers are tender. Drain the pasta, but leave a little of the water in a cup. lift the lid off of the sausage and pepper mixture and pour the pasta over it, remove from the heat and mix well. Add a few teaspoons of butter swirl around until you get the desired consistency. Add a little of the water until it makes the pasta moist so that they won't stick together. Don't add too much or it will detract from the flavor.
I usually make this a one course meal since it has all of the basic dinner food groups, startch, veggies and meat. However feel free to steam some fresh snap beans to accompany... mmmm time to eat!!
