My Oven BROKE last week, so Im not sure quiche would come out all too great in the toaster oven...I'll make individual Frittata's instead; those will cook just fine in there.
I'll add mushrooms, zuchini, and maybe some ham for the meat eaters since I have that Honey Baked circle of brown meat from a pig that was out on a farm enjoying his life one day when SUDDENLY, a mean scary man came to take him away....
Anyway, Frittata's sound good.

And fruit salad...bagels with cream cheese, Mimosa's, and deviled eggs, MAN, Im hungry....
- 8 Eggs
- 2 Tbsp milk
- 1 plum tomato, chopped
- 1 cup Mozzarella Cheese, shredded
- 1/2 cup white mushrooms, sliced and sauteed
- 1/4 cup fresh basil, chopped
- oil for pie pan
Directions
- In a bowl beat the eggs and milk together.
- Mix in the tomato, 1/2 cup of Mozzarella cheese, mushrooms, and basil.
- Oil the a 9" pie pan.
- Pour the egg mixture into the pie plate.
- Bake at 350F for 20 minutes.
- Top the frittata with the remaining cheese and return to the over for 10 minutes, or until puffed and golden brown.
- Remove from the oven and allow to stand for 5 minutes before cutting.
A Side Note:A frittata is the Italian version of an omelet, but is doesn't require sophisticated or tricky maneuvers, so I LOVE FRITTATA"S. Even if you can't make a pretty omelet, you can make a great frittata. The frittata is made "open-face" style and isn't folded over. It's part of what makes Italian comfort food fantastic, and...well...COMFORTABLE!. It is healthy, tasty, and simple to make. You can add meat or keep it vegetarian. It can be served for breakfast, lunch, or supper. So WONDERFUL with a side salad and fresh fruit....YUM!
If you have eggs and cheese almost everything else can be added. You have some broccoli left over from dinner the night before? Cut it into bite size pieces and include it. Vegetables are always welcome for flavor, color, and crunch. Herbs can be added fresh or dried. Your cheeses will also effect the flavors of your frittata. Spinach, and Gorgonzola create a sophisticated frittata; YOU CAN FAKE SOPHISTICATION!!!!. BON APPETITE!

Oh, geez...the mobile grooming van came for the dogs..
They're gorgeous now, but....
They cried for me. I wont lie.
I could hear them crying from inside the house.
I checked on them a few times, just peeking out, and into the van, but they were fine. I could hear the groomer saying, "Oh, stop the drama, you're ok..."

This is an ACT....they're NOT sad. Just SPOILED.
(And, too sweet for WORDS).

One of my neighbors asked me if we planned to "spray off all the sidewalk chalk before her guests arrive on Easter Sunday".
At first I laughed because I thought she might be kidding....
Then I told her "No, sorry....I actually planned to paint over it with a clear paint to preserve it..." then I went back to pushing my son on the swing, and yelling at the others to get out of the road...all the while, I KNEW she thought I was serious.
She looked REALLY confused, and because I THOUGHT IT WAS FUNNY, I left it that way.
She thinks Im about to seal the driveway to preserve the kids sidewalk chalk murals...

I've had drama-dogs, too. I don't know what to say. It's our own fault for spoiling them silly, you know.
The nerve of some people! She must not have children..or she must have been a really boring mom!
I make egg casserole all the time. So much easier than an omelet. And yea, i'm not sophistacated enough to flip and fold em'.

Why didn't I think of that? When Colin did his chalk drawings, I should have preserved them! But, I took pictures! Take pics of your boys' chalk drawings! (OMG - your neighbor - was she really serious? Does she always suck the life out of the neighborhood?)
