Chicken Pot Pie
I cooked a lot of frozen chicken tenderloins in some chicken broth and cut them in chunks. I made a white sauce with butter and flour, milk and chicken broth. I added a little poultry seasoning which really made it smell and taste great. I added some sauteed chopped onion and celery, some leftover green beans and a few pieces of leftover carrot, chopped and I diced up a potato and cooked it to add to the mixture. After the filling was done, I poured it into a casserole pan and topped it with biscuits and baked it until the biscuits were done and the filling was bubbly. It was delicious.
Next time I think I will use cream of chicken soup and a can of Veg All vegetables. (An ex-boyfriend who was a hunter turned me onto Veg All. I think he used it for venizen stew. Veg All is best because it has celery and potatoes in it and it tastes fresher than regular mixed vegetables in cans.) I also would like to use pie crust instead of biscuits on top. May even try to make my own.
White Chicken Chili
We love spicy white chicken chili and I have tried to make it a couple of times. For my next version I plan to try canned white beans, chopped onions, canned or leftover chicken, chicken broth, chopped jalapenos and juice for heat, cumin and a little chili powder or I will just use a spice package for white chicken chili that I got at the store last time. It was very good. It think it was McCormak.
White and Black Chili
Saw a recipe online. Sounds good. Just white beans and black beans, Mexican style stewed tomatoes,chunks of chicken and extra spices if needed. I can't wait to try this.
