I love making Mexican food especially for parties. It is so easy to buy the chips, taco shells, seasonings, tortillas, cheese, green chilis, salsa, refried beans, black beans, sour cream, etc. and put them together a million different ways. Plus ground beef, chicken and steak strips, onion, green peppers, tomatoes, cillantro, etc. How about chicken enchilada's with cheese and sour cream sauce? Plus don't forget the margarita mix and the soothing apple juice and iced tea combination that I used to get at my neighborhood Mexican restaurant in Oklahoma.

For my birthday at the park, Jaime made layered dip with scoops corn chips and several other things, but I loved what she called Mexican lasagna. It was so simple. She layered tortillas, seasoned ground beef and cheese into a lasagna-like casserole in a pie pan, squished it down tight and melted it in the oven with more cheese on top. It had a great texture and flavor and was so easy to cut and eat even at the park. Since she is not into visible vegetables, it did not have tomatos, chilis, salsa, etc. So I took the liberty of putting those things on top with a little sour cream. It was even better heated up in the microwave the next day. Wish I had a picture but it is gone. Next time I will remember to take one. Thanks, Jaime!

Update: My bad. Jaime tells me the Mexican lasagna came from a BOX. I have never seen it. I still think I could make it up from scratch, but didn't want to mislead anyone. It did taste great, though.
