It's really easy! ----

You'll need some pasta, some white cheddar cheese (something that melts well!), some velveeta or smooth melting orange cheese! (American whatever...) basically two smooth melting cheeses of your choice (or you can make your own cheese sauce from ANY sort of cheese if you are familiar with doing that, some parmesan cheese, some onion flakes or finely diced onions, tuna in water in the can, and a can of sweet peas!

Prepare the pasta just before the sauce completes.

Put the onions into a saucepan/skillet and saute them up with a bit of butter or margarine until they are transulucent/cooked medium soft. (If fresh onion!) ---- If using dried you can add it with the rest of the spices to the cheese sauce as below.

You'll melt the white cheddar and american cheeses down with the onions ...using milk or cream to thin the cheese sauce out enough to be able to coat the pasta when it's done! (I used 2% milk---rule is thicker/fattier the milk the richer the sauce!) We like ours sorta on the ultra creamy side...but I use whatever milk or cream we have on hand.

I just melt down the cheeses until they are nice and liquidy, and then toss in some paprika and a dash of garlic powder (not garlic salt...)

I also usually put a bit of green parsley (but basically you can season it to your liking with whatever you wish!)(You can also used dried just add it when you do the spices!)

Then I put the peas and tuna into the cheese sauce until they are heated through well, and then I add the pasta and toss mix it thoroughly..being sure to coat all of it evenly!

(We usually use rotini swirl pasta because we like the way the cheese sticks to it so nice!)

Then I top with some parmesan and sometimes with a even sprinkling of italian bread crumbs (I let the breadcrumbs rest a bit first before serving so they are not so 'crunchy' ---the steamy/hotness of it does well to soften them a bit after 4 minutes or so!)

I also sometimes serve this via a casserole dish, and what I do is prepare it all as above, then I make a 'ritz cracker' butter crust and it's sorta like a pot pie.. (I just bake it long enough in a baking dish to brown up the crust a bit!)
(Ritz cracker crust is a bit of milk and lots of crushed ritz crackers (or any crackers really!) made into a paste like with some butter to hold the crumbs together a bit!) and pushed into the glass baking dish to form a crust.)
So then dump the super cheesy tuna mixture over the 'crust' and then bake for about 10 minutes or less until the crumbs are just starting to brown on the edges (probably like 5-10 minutes around there...)

Yes this is my own recipe ---sorry it's so scatterbrained and there really aren't any measurements! - I'm going from memory --- I keep most of my recipes and cooking knowledge in my head, versus a recipe book!  *Smiles*  afterall ... who cares about how tsp's of what went where and how ---as LONG as it TASTES GOOD!


I'll update this journal later when I have more time with some pictures and some 'approx' measurements if anyone wants ---the family wiped it all out tonight so no photos!

We sometimes throw in a different veggie and we've done this with broccoli as well! - It's one of those types of recipes you can alter and nothing really can go wrong! -- We've even had it with cooked carrots and it was still super tasty -- It's all that cheese!
