Well, JJ starts school in 20 days, so we have been doing some test runs of his lunches. Since raw milk is going to be avoided, I wanted to get some practice runs, in a way, to see what would be good and what would not, before school started.
I have one of those insulated bag things that they gave me in the hospital when I had him to store formula in when out and about. I figured for these test runs, they would be fine, instead of risking a spill or a smell in his good lunch box that "Gamma" is sending him. I have been making his lunch at night before I go to bed, then putting anything that needs to be in the fridge in there, taking it out and putting it in the bag at the same time he would be leaving next month, to see how well it will last.
So far, for lunches, he will be taking:
Main Serving:
PB&J Sushi (PB&J on a tortilla with a banana, rolled up and sliced to look like sushi)
Cold pasta noodles with butter (usually left over from the night before, 1/2 cup serving)
Cold Cut sandwiches cut into different shapes with toast shapers
Hot dog rounds (Sliced hotdogs)
Chicken Fingers (my chicken cutlets made otu of tenders instead of fillets, with the lemon butter dipping sauce in the egg wash used for breading)
Still warm chicken noodle soup in a thermos
Cold baked mac and cheese (He actually asked for seconds when we tried this one, lol)
Pizza Bagles (Done the night before, pizza made on a bagle, cold pizza, lol)
There are a few more things, but I am forgetting them right now, lol, and my binder is not near me right now, lol
Side Dish/Snacks:
Carrot sticks
Celery sticks with a travel tub of peanut butter
Crackers
Pretzles (mini, sticks, or crisps) with PB tub
Small serving of white rice
Broccoli tops or spears
Hummus with veggie spears
Sliced peppers with travel ranch dip
Bagle chips
Sliced apple
Grapes
Fruit or veggie kabobs
Cookies
Small brownie
Rice Cakes
Tortilla Chips with cinn/sugar and apple suce for dipping (Chips cut with cookie cutters before baking)
Baked Cheese Bites shaped with small cookie cutters (recipe below)
Granolla Bar
Dried Fruit
Turkey and Ham Cubes
Fruit Leather
Pea Pods and Green Bean mix
Again, I know I am missing some things in the list, and I will add more as we discover moret hings that work, lol
I guess I am lucky because JJ will eat almost any veggie raw. He loves veggies and fruits, so I got very lucky with him, lol










Baked Cheese Bites:
2 cups sifted all-purpose flour 
1 pinch salt 
6 ounces shredded Cheddar cheese 
1/2 cup butter, melted 

DIRECTIONS:
Preheat the oven to 325 degrees F (165 degrees C). 
Lightly grease a large cookie sheet. 
In a medium bowl, mix together the flour and salt. Stir in the cheddar cheese and melted butter to form a firm dough. Roll pieces of dough into ropes as big around as a penny. Slice into 1/4 inch pieces. You may need to chill the dough until firm for better rolling. (I roll the dough out to 1/4 inch thick and cut with small cookie cutters)
Place the slices onto the prepared cookie sheet, 1 inch apart. 
Bake for 20 to 25 minutes until the bottoms of the coins are lightly
toasted and the tops are firm. Allow to cool completely before serving. Store in an airtight container at room temperature.
