BAKED WHOLE SHARI (WITH MASALA STUFFING)

You will need

Fish Dry Rub:

3 whole pieces Shari fish (or any local baking fresh fish you have-tilapia can be used), cleaned

Fish masala powder (I will be using the Gulf Bezar powder)

Garlic powder

Turmeric powder

Black pepper

Salt

Red chili powder


Fish Stuffing Mix:

1 tsp turmeric powder

1/2 tsp salt

2 cups chopped onion

1 minced garlic clove

1 minced small green chili

1 tsp dried lime powder

1/2 cup fresh dill ( I don't think this ingredient is necessary)

Oil

1-2 tomatoes, sliced


Preparing the fish:

You need to clean the fish and then rinse with water then rub some lemon juice and olive oil all over it to give it a nice smell.

You could buy your fish whole and frozen already descaled and degutted or go the fish market and have the guy there do it for you.

Directions

Sprinkle the fish with the fish masala, garlic powder, turmeric, pepper, salt, red chili powder and rub well into the skin.

Mix the masala stuffing ingredients together and fill the stomach cavities.

Place the fish on a rack in a shallow baking pan, drizzle with oil and put into the oven at 140 degrees.

After 30 minutes cover the fish with tomato slices and increase the temperature to 190 C degrees for a further 30 minutes.

To finish, brown the fish under the grill for a few minutes.

Cooking time: 1 hour 15 minutes

Serves: Six


Tip: You can put sliced onions and tomatos under the fish in the pan if you want
