Try as I may, I can never seem to get my hubby or ALL of my kids to all enjoy the veggies I prepare...My son likes broccoli, my daughter doesnt, I like squash and eggplant, my husband doesnt...so on and so forth :(
SO, I need some good and savory veggie recipes please! I think my hubby WOULD eat squash and eggplant if they were prepared a certain way, or just mixed in something else to where he doesnt even know they are there...and I think my daughter would eat broccoli just the same!

I make something called Mediterranean Vegetable Stew.
Heat a little oil and cook an onion until it's softened. Add 2 stalks of celery (sliced), 2 cups of rutabaga or turnip (cubed) and a small bag of baby carrots. Cook that for about 5 minutes.
Add a 28 oz. can of diced tomatoes and bring it to a boil. Reduce the heat, cover and simmer for 20 minutes or until the rutabaga is tender-crisp.
Add a 19 oz. (or larger) can of chick peas (drained and rinsed), a zucchini (sliced), a sweet pepper (sliced - you choose the colour) and cumin, ground coriander, hot pepper flakes, salt and pepper to taste. Simmer for 10 minutes or until zucchini is tender.
Serve with couscous, rice, naan bread, etc.
