With all the Pillsbury Cinnamon Rolls dropping from the heavens in Latte Land, I thought I would share a recipe for absolutely increadible cinnamon rolls my mom got from a fireman. This is actually half the recipe, because he would cook them for the whole company...he cooked in big quantities!

Big Cinnamon Rolls
- 1 1/4 Cup Lukewarm (120) Water
- 1 Box JIFFY Single Layer Yellow Cake Mix
- 1 1/2 eggs (6 Tbs = 1/4 Cup + 2 Tbs)
- 1/2 tsp. Salt
- 1 pkg Yeast (1 Tbs)
- 1/2 Cup Flour
- 2 Tbs + 2 tsp Oil (8 tsp.)
- 2 1/2 Cups + 2 Tbs. Flour
- Additional Flour for kneading
- Melted Margarine, Cinnamon & Sugar
Dissolve yeast in water for three minutes. Add Jiffy mix, 1/2 cup of flour, eggs, oil and salt. Beat until bubbles appear (approximately 3 minutes) Slowly add 2 1/2 cups and 2 tablespoons of flour. Stir with spoon making soft dough. (sticky) Will have to add 3/4 cup of additional flour while kneading - Knead for 5 minutes.
Place in a greased bowl, turn, cover with plastic wrap sprayed with cooking oil. Let rise 1 hour. Roll out to 1/4 inch thick. Spread with melted margarine, sprinkle with cinnamon and sugar (to your liking). Roll up jelly roll style and cut into 12 even slices. Place in a greased 9 x 10 pan 1/2 inches apart. Let rise another hour.
Bake at 350 degrees for 20-30 minutes.
Once completely cool, ice with a mixture of 1 cup powdered sugar and a little milk.

Hardest part of this is finding the Jiffy Cake Mix. They are little boxes that look like Jiffy Cornbread Muffins, but they make one small single layer cake. I actually found them at the store yesterday and bought all four boxes they had. Stock photo...I don't have a camera to take a picture of mine! I
