Today was off to a great start. I finally made the strawberry banana breaksfast smoothies and they were a hit. I was pretty lazy today and didn't do a whole lot. But I am making up for it. I just finished planning the menu for the week and after the children go to bed (in 30 minutes) I am going to go through my shopping list and cabinets so i dont rebuy things ((which is a horrible habit of mine) and ad the same time I am going to throw out every processed and other things that I am no longer eating. Which kind of feels like a waste but i need a fresh start and room in the pantry and overloaded refridgerator.
Here is my dinner menu for the week. BUt you will have to check back to make sure I stuck with it. Because one of my downfalls is that I am a very impulsive person that gets distracted quite easily....I don't know how I am going to make it through school when i start in january lol. ANWAY MENU (see what I mean about distractions lol)
WEEK 1
Monday - Veganized tater tot casserole
Tuesday - black bean and sweet potato enchilada pie
wednesday - veganized shepards pie
thursday - Chickpea cutlets with roasted baby potatos and green beans
Friday - simple spaghetti with salad and whole grain garlic toast
Saturday - Black bean burgers and sweet potato wedges
Sunday - Veganized Seitan Stroganoff.

If anyone is wanting to follow my meal plan a vegan breakfast is pretty easy to wing. My lunches are almost always leftovers from the dinner the night before (i usually make large batches so i don't have to worry about lunch so much the next day.) So most of my effort goes into planning dinners. Another tip for anyone interested keep nuts on hand any kind you like and you get the mixtures with dried fruit as well. It is a great healthy snack and can keep you full for quite some time. And also keep your favorite fruits on hand. And heres a fun fact. An apple in the morning can energize you just as much as your morning coffee and also does a great job keeping you full it also doesn't mess up your freshly brushed teeth in fact it can actually give you a nice deep cleaning lol.

snack - some varied nuts
lunch - Leftover bean burritos and homemade quacamole
snack - about a cup of oatmeal
Dinner - Wild rice and veggies
