It's amazing how doing one thing to better your health turns into major motivation to do everything else.
I swear this diet cures depression lol. Anyway I walked 3.2 miles outdoors with my  mom today, I was 100% vegan, and I managed to get alot of work done.

One of my biggest problems is focus. I can never focus fully on the task at hand. I have a tendency to start something, a random thought pops into my head and than I end up starting something else before I get the first task finished. But today was different. It started last night when I cleaned out the refridgerator. I deep cleaned the sucker :), so I could have plenty of room for my fresh groceries. Than this morning I got up, made sure the kids got ready in a timely manner, than went to my moms to work out. We decided to walk outside since it was nice out and we walked for about 45 minutes. Than I hit the grocery store and got my weeks worth of groceries and didn't spend over 100 dollars ( a big feat for me sadly). Got frustrated when I found out that brewers yeast is not the same as nutritional yeast. I cant find the stuff anywhere but there are so many recipes that include it. It's like a vegan staple. After the groceries got put away i sat and had lunch and fiddled around on the computer. Than I got back to work.

I went through the pantry and took out every processed food and any other item that wont fit my diet. I seperated the open and expired foods and set the unopened packages aside for donation (my good deed for the day).  I then did the dishes, cleaned the livingroom, did a bit of rearranging and helped Seth disguise his turkey (homework assignment) We made him into a disco ball (my idea cause all I had was some glitter and glue and he refused to just color it). I was seriously productive. though now that it's the end of the day it certainly doesn't look like I did much lol.

And here's some big news. DH has decided that he wants to give vegan food a shot!!! YAYYY! It's kind of a funny story. He happened to be home from truck driving when Dr. OZ brought the big meat and potatos cowboy on the show. Well the cowboys stats werent much different than my husbands and Dr. Oz put him on a vegan diet for thirty  days. So the guy goes back on the show sometime last week and he lost 30 lbs and his stats improved significantly. Well I called my dh and told him about and he was shocked. So now he wants to do it too. Problem is the truck driving. But he is going to be off work for about a month (which is a long long irritating story) and he wants to go completely vegan for that time he is home. We will see how long he lasts. He is the pickiest damn eater you will ever know. I have a feeling that it will be scarey.

And Finally I did a good job at sticking to the menu. I didn't have any leftovers for lunch from the night before so I had an amy's frozen meal for lunch. So on to the FOODAGE OF THE DAY

Breakfast - I munched on walnuts most of the morning and drank some water

Lunch - Amy's shepards pie

Snack - banana (that my toddler hijacked about halfway through) So I moved onto a clementine (which my toddler also hijacked) so i also had a bit of popcorn. And just so you know this was not in one sitting this was over the course of like 4 hours.

Dinner - Veganized tater tot casserole. Which isn't necessarily the healthiest of meals. But I am trying to make the food apealing to the kids as well. And when you think about it with the ingredients it has the calories are still cut in half at a minimum from the real thing and it's loaded with veggies. BTW it tasted great and the kids loved it as well.
