So...I made a dinner for my husbands family. 5 of them flew in from Austin..I am putting up two of them, and I made dinner for the MAIN get together...I made enchiladas. Both red and green sauce, beef and chicken. I made my Mexican coleslaw (my goofy recipe that I made up), rice and beans..of course I made salsa and we had chips to go along with it. I am assuming it was good, as I didn't even get to eat any of it...neither did my SIL....I was busy trying to make sure that everyone had what they needed and my SIL was busy with her baby....when we went to get food, there was only rice and beans left....oh well. It was a success, overall. Now I have a lot of cleaning up to do, and I am exhausted...since I make everything homemade, it was very tedious, and tiring...OH my! I think my spelling is taking a back seat to my delirious being...ugh! Well, some of you asked what was on the menu, so there you go. I am off to bed..I am beyond tired, and I have to get up to make breakfast for guests...ni night!

I'm sorry you did not get to eat any, was this your birthday dinner? I can't believe no one noticed you hadn't eaten....

Oh, I forgot to add that I used that MONSTER zuke from my garden as a boat. I stuffed it with shredded pork, rice, veges and topped it with cheese....I wonder how that tasted too....LOL!
