Day 8started out good. I had leftovers for breakfast and lunch cause there was a crap ton of leftover chickpea cutlets leftover. and I have to say they are fantastic as a sandwich. I am soooooo proud of myself though because yesterday morning I went for a walk by myself and I jogged. It's sad but that is a huge accomplishment. Jogging was something I could never do for more than the length of half a block. Because it hurt to breath. But yesterday I got in a good MILE. That's right ladies 1 MILE!
Maybe it's all the walking i have been doing with my mom all week. We are walking 2 miles a day .Thing is though, I didn't feel like walking with my mom was doing much for me because she slow. It's not getting my heart rate up at all. Which is what needs to happen to really benefit from a workout. That's why I went by myself yesterday. I think what helped me get through it was I was making short goals. It started with "lets see if I can jog to that stop sign." And I did it. I kept aiming for the next 6 stop signs. my legs are actually cramping a little bit. YAY!
Than I went out to do a lil thrift shopping to see if i can find anything for the kiddos. Which i only found a couple things. I then i had to go out with my MIL and she begged and pleaded for chilies and I begged and pleaded for P.F Changs because they have more options for me. And she got irritated and told me she didn't like eating out with me anymore. Ultimately we went to chilies and i did the absolute best I could But failed. She wanted to do the 2 for 20 special where you get an appetizer,, main course, and dessert. It's sad but I didn't enjoy it one bit. I was stressed and feeling guilty the whole time.
I suggested chips and salsa for the starter , But she wanted onion strings (FAIL), All they had on the menu for that special was burgers, But the server was very nice and really worked with me and was patient with me while I was trying to figure out what to get. Ultimately I got the black bean burger with no mayo and steamed veggies and Tea to drink (so that's like a B if i were getting graded for yesterday lol). Technically the black bean burger wasn't apart of the special but they let me substitute the meat , As soon as the plates were brought to us I immediately cut it in half and gave the baby some of my steamed veggies and my mil's tomato. But then it was time for desert. My mil ordered the molten and i told her that I was full and she threw a fit and said I am not eating this by myself. So i told myself that I walked 10 miles this last week I deserve a small treat and had a couple of bite of the delicious molten chocolate cake. Even though I already knew I ruined my diet I didn't have any of the ice cream. I really need to find some good vegan desert recipes. I picked up some peanut brittle today to fill any future sweet cravings I might have. So by the end of the day vegan was not part of my vocabulary.
Day 9 Today I was back on track. For breakfast I had kashi autumn wheat cereal with soymilk. Lunch dh and i went for chinese and for dinner I made some mushroom and black olive spaghetti though the amount i hA probably wasnt healthy. I didn't do so good on getting in any snacks. I need to start doing better about getting in my fruits in. Thats alot harder than it should be. My veggie servings are most definately being met lol. I might start making sure I eat some fruit with breakfast. I have some steel cut oatmeal But i haven't quite figured out how to make it taste good. So any pointers on that is welcome.
Heres a funny story to close with btw. A friend of ours took my older boys for the night last night. And they got to go work on a farm. They fed some calves, and chickens, and did various other chores which included gathering eggs. Well our friend told the boys they get to have some of the eggs for breakfast. Well she said my eldest looked a bit stunned. She said he looked at the egg, then the chicken, theb back at her took a deep breath and said " UHH I'm Vegan." That tickled when i heard that. For the record my kids aren't completely vegan. I will let them make that choice for themselves. For now though they eat mostly what I eat but they do get meat every once in a while. It's more about building up their pallet so that they wont be like dh and gag when they take even the slightest bite of veggies.
