My daughter Rel has been taking cooking classes at a youth center she is part of on Maui. She's made all manner of dishes and desserts and when she's finished she always makes sure she makes me a plate.
So recently to help me out she's been cooking dinner for us when my oldest daughter doesn't cook (she has a newborn baby, goes to college full time, and works part time) when she's here at our house.
Last night, because the weather's been so stormy on Maui, I felt like eating soup. We had the chicken so we went to the store and these are the ingredients she had me buy: carrots and celery.
I started the chicken but she chopped the vegetables and added the seasoning, cooked rice, and voila! We had a wonderful, warm, scrumptous meal!
She said "mom, the vegetables have to be a bright color because that shows it's healthy" and her vegetables were bright and healthy! So bright and healthy I just had to take a photo of my serving and show it off!
