Spectacular Oatmeal Raisin Cookies

  • 1 Cup Crisco
  • 1/2 Cup Sugar
  • 1 1/2 Cups Packed Brown Sugar
  • 2 Large Eggs
  • 1 1/2 tsp. Vanilla
  • 1 1/2 Cups Flour
  • 1/4 tsp. Salt
  • 1 tsp. Baking Soda
  • 1/4 tsp. Ground Allspice
  • 1/2 tsp. Ground Nutmeg
  • 1 1/2 tsp. Ground Cinnamon
  • 3 Cups Bob's Red Mill 5 Grain Cereal (or)  Quick Cooking Rolled Oats
  • 1 1/4 Cups Raisins

Preheat oven to 375 degrees F.  Lightly spray cookies sheets or line with parchment paper (makes for easy, quick clean up.)

In a large bowl of an electric mixer, beat Crisco, sugar and brown sugar until creamy.  Beat in eggs until well blended, then mix in vanilla.  Stir together flour, salt, soda, allspice, nutmeg and cinnamon.  Add to butter mixture, stirring well.  Stir in Cereal (oats) and raisins.

Drop dough by rounded teaspoons about two inches apart on the prepared cookie sheets.

Bake until cookies are golden, but centers are still soft (10-12) minutes.  Cool on racks and store in an airtight container!

Made 70+ yummy cookies!

Very Good and really quite healthy.  The Red Mill 5 Grain cereal has lots of good stuff in it.  And who doesn't love the smell of cinnamon and nutmeg while they are cooking!  Comfort food and aromatherapy, its better than the spa!  LOL...
