Ok, I have two recipes in this post. The first recipe is the orginal one...which would be great in the summer or for people living in warmer climates. The second one is my take on the first one. Here they are:
Recipe#1:
2 lbs. chicken breasts
1 bottle BBQ sauce
4 ears corn
1.5 lb. watermelon
Coat chicken in BBQ sauce and BBQ or Broil in oven. Wrap corn in tinfoil with a pat of butter and place on grill or in oven with chicken.
Now, for the second one. This came out pretty damn good, if I do say so myself =):
2lbs of chicken breast, cut into chunks
1 bottle of BBQ sauce (I used honey mustard BBQ sauce)
1 package of frozen corn
1 package of Knorrs chicken flavored noodles
1 package of Pillsbury biscuits
The day before:
Cut chicken into chunks. Put into large bowl and cover with entire bottle of BBQ sauce. Cover and let marinate in the fridge for 1 day. I let mine sit for 2 days because I had something come up around suppertime yesterday. Made no difference.
Day of meal:
Take large sautee pan (or frying pan...whatever has a lid to it...lol) and spray with PAM (or a subsitute). Turn and heat pan. Meanwhile, take chicken out of the fridge. When pan gets hot, dump chicken into it. Make sure the chicken is spread evenly. Bring to a boil, cover and turn heat to medium. Cook, while occasionally stirring chicken, for about 15 mins (or when chicken is done). Serve with the noodles, corn and biscuits. It took me about 30 mins to prepare the whole supper.
This came out awesome. My kids gobbled it up and were asking for more.
